SUPER-EASY and QUICK CHEESECAKE RECIPE....

For those folks that don't want to wait for deliveries or the doorbell to ring, as in my other post about Phil's Phamous (I am just SO lazy!), here is a really TERRIFIC and SUPER-EASY FAST cheesecake recipe you can throw together quickly and enjoy! Give it a try....
Beat 4 eggs
Beat in a carton of whole milk ricotta cheese, continue beating until smooth
Beat in 1 cup of splenda and 1 TBL of vanilla
Pour into a glass pan and bake at 325 degrees for about an hour, until the edges brown and the top cracks.
Cool, slice, and eat.
I guess this ends the mystery LOL - I mean I REALLLLLLY LOVE cheesecake! :)

I've done pretty much the same thing several times, with the exception that I remove all or most of the egg yolks, use fat free cheese, either ricotta or two 8 oz blocks of fat free cream cheese, and I usually add a couple of tablespoons of lemon juice and about a tablespoon of finely grated lemon zest for flavor, which is optional, of course. I always add a tablespoon of cornstarch to the mixture, it helps to keep any leftover pie from weeping liquid as it sits in the refrigerator afterwards. You could also add any of your favorite flavoring extracts. I also like to put a scant coating of a fairly finely crushed up crunchy, lower sugar cereal like Special K on the bottom of the pan, to give the illusion of a crust. It can be topped off when serving with a little fat free yogurt or sour cream mixed with a dash of vanilla and splenda and some fruit. Makes a very nice dessert, easy to make.
