Plateaus and brief high weight gains are about as common as people who've had WLS procedures on this board. Almost everyone experiences them at one time or another, and for seemingly no reason at all. So don't worry too much.
As for the weights (anaerobic activity?) question...
Yes, weight lifting or other anaerobic activity raise your metabolism. My understanding is that steady state activity does not. So you might add resistance training and then replace a couple of your hikes with an activity which, after a 10 minute warmup (warm up until you start sweating), takes you to a level of exertion which is difficult to maintain for more than 20-30 seconds. Then, drop back to the level of exertion of an easy jog for 1-2 minutes and repeat 8 times. If you go any longer than 8 reps or 30 seconds, you may unconsciously begin to pace yourself and lose intensity and some of the benefits that the intensity brings (like, metabolism and growth hormone).
