Amaranth Grain as a good Protein Source

You may remember my earlier post about ancient grains like Quinoa and Amaranth in terms of how they could be used to meet dietary requirements of us post WLS folks.
So I ordered two pounds of Amaranth from HomeGrown Harvest to experiment with. It arrived today with some wonderful Pear Honey. The grain was very low priced - two lbs for something like $3.99, The honey was about $4.99

I proceeded to cook the grain (Cooking Aramanth is much like cooking cream of wheat cereal) and Amaranth grain is tiny. So I cooked 1 cup Aramanth with 2 cups salted water and 1 cup whole milk (for creaminess!) and cooked on low steady heat for about 30 - 35 minutes stirring occasionally..
Added 1-3 tbsp butter (to taste) and a good dose of the pear honey before serving and you have an awesome breakfast cereal, Nice nutty taste, a little chewyness,and filling and with lots of protein! (28g protein per cooked cup portion)
Before I tried it I had doubts but after researching it and finding that the protein is highly absorbable/bioavailable I wanted to try it. So far it seems like a good thing to add to our post WLS food options. If any of you give it a try, let me know how you use it and if you like it.

No experience with the Amaranth,
But the Quinoa is great with roast beef.
Chunks of roast or “stew meat” browned first in a skillet
And then thrown in a ****pit with Qunioa and
a can of Rotel. A great stew.
Not just a ‘breakfast item.’
Sort of like beef-Barley soup.
I imagine the Amaranth cold serve the same way.
