Yeah, like that's all I ever have to say.
One of my favorite summertime activities IS making homemade ice cream.
I converted an old recipe that was one of my favorites to be a little more WLS friendly and it turned out pretty damned good if I do say so myself.
SO - here it is if you'd like to give it a try:
Pina Colada Ice Cream
2 cups Half & Half
11/2 cups Splenda
1 tsp salt
2 tsp vanilla
1 whole egg
3 egg yolks
2 cups Heavy Cream
1 scoop protein powder
1 cup crushed pineapple
1/2 cup shredded coconut
Heat first group of ingredients over medium heat in a heavy sauce pan; stirring often until steaming but NOT boiling.
Beat the eggs together well. Temper eggs with appx 1/4 of Half & Half mixture, then return egg mixture to heat.
Cook this mixture for appx 10 - 12 minutes stirring CONSTANTLY until it coats the back of a spoon. Remove from heat and allow to cool for at least an hour in the refrigerator.
Dissolve the protein powder into the cream and stir in the pineapple and coconut. Combine the cooked mixture with the cream mixture and pour into ice cream freezer. Freeze according to manufacturer's instructions.
This will be soft serve consistancy when it's done, but for best results - pour into sealable freezer container and allow to "Hard Freeze" for about 4 hours or overnight.
