Dinner for One.........

Hey all.....    3 months out here, and doing GREAT....   i'm just having such a hard time figuring out meals.   I'm single, and have always struggled with the "cooking for one" thing.   That certainly contributed to all the fast food I ate prior to surgery.    Anyway - things are going great so far.   I'm doing very well avoiding the junk food, simple carbs, etc - but, I'd appreciate any advice about "cooking for one."    I am very satisfied with a very small portion, but i'm struggling to figure out the day-to-day eating thing.     Any suggestions for after-work dinners, snacks, etc would be greatly appreciated.   Overall i'm doing GREAT, and I really appreciate the support from the guys in this forum who have helped me get so far in my journey.    Thanks again - Chuck

Great after work dinner is a Wendy's small chili...220 calories, fills you right up.  Also, chicken breast, turkey burgers, sloppy joes.  I eat them for dinner and take the leftovers (other than chicken) for lunch the next couple of days.

I buy turkey, ham, or roast beef cold cuts and have a few slices as a snack. Dx got me on the Ostrim kick for snacks. There are some small water packed tuna cans for indiviual servings that have a pull of off tops. I use these for dinner, I do not drain the water off, I just use a fork to shed most of the liquid as I eat it, if its drained I find it too dry to eat. The local super market has rotisseriechickens, I section them up and have a leg and wing, or a breast with most of the skin removed.

Make chili at home and eat it for days. Use 93% lean beef and take the inside of chicken sausages. It is awesome and hige on flaovr and protein. also get a subscription to men's health or men's fitness. Every month they have a couple recipes in there with all the sats. They are really good sometimes. Either that or check out their websites. It really depends on your food tollerances, but in general I'd suggest salads with meat on top...and cooking larger portions of things and freezing them.  I often eat salads with some type of protein on it.....tuna, the prepackaged chicken chunks they sell in the refrigerated sections of the super market, or roasted chickens you buy in the deli department, even a hamburger cut up is ok.   I just find that it's easiest to do for 1 person...so this has become a staple for me.   I do sometimes cook larger portions of food, and just freeze what I won't use in the next 3 days.  I freeze it in individual servings, so when I'm thawing and reheating, I will only thaw what I use...although at 16 months out, I don't really do this anymore. DX did have a recipe for some type of man grub.  I honestly don't remember all of the ingredients, but he swore by it, and said that he still eats it regularly....so you might want to ask him for the recipe...or perhaps if he sees this he'll repost it anyway.  Hope this helps. Sometimes in the frozen food section of "better" supermarkets you can find individually packaged single serving portions of uncooked fish (salmon, tilapia, flounder) and uncooked marinated chicken.  Cook them in a healthy manner and there's your protein.  They, along with some fresh veggies should give you some nutritious, WLS friendly basics.  Best of luck and glad to hear you are doing so well.
