High Quality Beef Jerky

I have started grinding all my own meats and making all my own sausage. I can control the quality of the meat that goes into them and the amount of fat and chemicals.
As for store bought jerkey, I buy the CostCo jerkey, when chewed slowly it breaks up nicely and gets very moist, by the time I swallow it, it is a mu****hen swallow the mush slowly. I havent had any problems wit it at all!
