Ditto on the recipe! I have started grinding all my own meats and making all my own sausage. I can control the quality of the meat that goes into them and the amount of fat and chemicals. As for store bought jerkey, I buy the CostCo jerkey, when chewed slowly it breaks up nicely and gets very moist, by the time I swallow it, it is a mu****hen swallow the mush slowly. I havent had any problems wit it at all!
Get it hot, hit it HARD,

I love beef jerkey but found that most, if not all of the kinds avaialble via places like Safeway are too tough.  I ordered some from Omaha Steaks that turned out to be excellent.  Not stringy and very flavorful.  Downside is that like everything else from places like OmahaSteaks, it is expensive.
