What are you eating today (Thursday) or yesterday?

Hi all,

For  workouts I am going to see my trainer- I think we are on shoulders, then 30 min. on the treadmill.  I am going to try really hard to get back and do another 30 min. later in the afternoon.

Here is my plan:

B- Fiber one and yogurt

S- Protein shake

L- Tuna on thin whole wheat bread and tomatoes

S- cheese and berries

D- Fish and veggie stew

S- 1/4c nuts

B-Greek yogurt w/ strawberries

S-Cashews

L-Lentil and rotisserie chicken stew

D-Poached chicken and sauteed spinach w/ chickpeas/snap peas/baby corn

S-Pistachios

Water throughout the day

I use cottage cheese instead of Riccotta some times. This is from Eggheads blog.  I also will be adding ground beef in the sauce when allowed.

Shelly's Baked Ricotta

8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.

1/8 batch (about 2oz) Cal-151 Carb 4.1 Protein 12.4

My eating yesterday was:

B: protein latte
S: hot quinoa cereal with walnuts & a dollop of Greek yogurt
S: Evidently it was nothing special, because I can't remember!
L:  raw fennel, apple, Babybel cheese
S: trail mix
S: raw sugar snap peas
D: roasted veggy & ricotta pizza
S: none

My workout was a Pilates/yoga class.
