Absolutely! For the most part, all of the ingredients are "to taste" but I think this is a good base. Adjust ingredients to your liking.
Shrimp Burgers
4 burgers
Ingredients:
1 lb med-lg shrimp, peeled and deveined
¼ cup plain bread crumbs
1 cup navy beans, mashed
2 medium eggs, beaten
1 tbs hot sauce
½ tsp chopped garlic
1 tsp seafood seasoning (I use Old Bay)
½ tbs freshly ground black pepper
1 tbs chopped fresh parsley
½ tsp chopped fresh chives
¼ jalapeno, chopped, seeds optional (I use the seeds)
1/4 cup chopped green onions
Olive oil
4 slices turkey bacon, chop into small pieces, optional
Spinach leaves, shredded, optional
LF Cheddar cheese (or cheese of your choice), optional
Directions:
Divide the shrimp in half. Medium coarse chop one half and set aside. Place the remaining shrimp into a food processor and pulse 6-8 times.
In a large bowl, mix together the breadcrumbs, eggs, hot sauce, garlic, seafood seasoning, and black pepper. Mix in the pureed shrimp, parsley, chives, jalapenos, and green onions. Add the coarsely chopped shrimp and stir to combine. Add olive oil to moisten, if needed. Form the mixture into 4 patties and place on a parchment-lined baking sheet. Chill for 20 minutes in the freezer or 2 hours in the fridge.
Heat a large frying pan in the oven, add olive oil to cover the bottom of the pan. Once the oil is hot, add burgers and bake 4 to 6 minutes per side. Add cheese. Transfer to a rack to cool slightly. Sit the burgers on top of shredded spinach. Top with bacon pieces. Enjoy!
This recipe is adapted from an old recipe I had prior. The old version uses plain panko however the panko was too much for me so I substituted plain bread crumbs and added navy beans.
Glad to hear your cold is much better now. You're brave to do 2 training sessions AND the treadmil in one day.
I had a plan for yesterday's eating but it slipped through my hands and was lost because of how long it took me to do some errands and visit my internist for an "emergency" cortisone shot in my hip (which is having a bursitis flare-up). I didn't have time to go home to eat and the thought of fast food (even the smell of it) didn't appeal, so I bought a very small bag of pretzels and didn't eat again until dinner.
I had to skip my exercise class yesterday morning also (because the doctor visit was so last-minute), and that's probably just as well considering the beating I took at Monday's high-intensity class. I've decided to do the senior citizens' cardio class on Mondays from now on if it fits with my work schedule. That's galling because I consider myself far more physically fit than what I think of as a "senior citizen," but the ladies in the seniors class are pretty *****y, so I think I'll be OK.
