Making healthy food is my BIGGEST struggle!
I do tons of stuff in my crock pot, pot roast with onions and carrots, I love turkey breast with lemon and pepper, a whole chicken with a can of beer in the crock, sweet Italian sausage with tomatoes, onions and peppers. Google Crock Pot 365, there is a great blog out there and she gives you wonderful recipes that you can make as healthy as you want (or as sinful too, like her chocolate lava cake, to die for LOL).
As for lunch I eat the same thing every day, turkey breast with spreadable Brie cheese, roasted red peppers and basil all rolled up.
