What are you eating today (Tuesday) or yesterday?

Yesterday the temps here in my little corner of TN were in the low 70's and my southerner coworkers complained that warm weather is not very Christmassy. But I am not dreaming of a white Christmas. Been there, done that, shoveled the snow.

Today's food plan:
B: protein latte
S: apple pie oatmeal (made in the crock pot overnight)
L: scrambled egg beaters w/ mushrooms & spinach
S:pistachios
D: pork loin, roasted winter veggies, mashed potatoes
S: almond, craisin & sesame seed snack mix

Exercise: 45 minute weight & resistance class. Instead of step aerobics yesterday, we had a guest instructor who did an interval training class. It was brutal. I'm all for better cardio fitness, but my joints have a hard time with the heavy duty jumping type stuff.

This is my only day off this week and as usual, I have a long list of errands and chores to do. Makes me tired just thinking about it.

L-3 bean burger w/ LF pepperjack cheese, pickle chips w/ homemade low sodium tomato soup

S-Homemade Oatmeal and walnut "cookie"

D-Chicken meatballs, roasted shaved brussels sprouts, green beans and shallots

Water throughout the day.

We love Brussels sprouts. Tell me more about the dish you prepared. You shaved (shredded?) the sprouts, then roasted them? Or what?

Yes, I shave/shred the brussells sprouts in a food processor.  Add fresh green beans and I quarter shallots (I like a lot).  Put it all in a bowl and drizzle Wegmans brand basting oil (or homemade herb seasoned oil if I have any on hand) to coat, kosher salt and freshly ground pepper to taste and spread on a baking sheet and bake at 350.  It it absolutely delicious!  I could eat this everyday.  This is also good way to use up leftover veggies as well such as carrots, cauliflower, broccoli, etc.  Enjoy!

That sounds delicious. We love roasted veggies but I hadn't thought of shredding the Brussels sprouts before. Definitely makes them easier to eat after WLS.

Last night I roasted cauliflower, whole Brussels sprouts, carrots, and rutabaga with a few fresh cranberries thrown in for the last 5 minutes of cooking. It was very good. The cranberries were tart but went well with the veggies.

mmmm I'll have to try it w/ roasted cranberries.  I don't roast Brussels sprouts whole unless they're really small bc then they don't cook all the way and come out semi hard on the inside and I can't digest them that way.  It also works well if you quarter them.

B: protein smoothie with vanilla non fat yogurt, strawberries, banana and splash of OJ w/ calcium

S: breakfast burrito (nitrate free sausage (whee, it has no MSG, no preservatives, and no nitrates), egg beaters, low fat cheese and homemade salsa), milk

L: leftover chicken salad with almonds and dried apricots, milk

S: hummus and carrots

D: homemade turkey spaghetti sauce over whole wheat pasta, milk

S: unknown at this point

 

Exercise: already completed 15 minutes of laps and 60 minutes of water fitness class for a total of 75 minutes today.

s- dry roasted almonds 100 calorie pack

l-salad with lettuce,tomato, cucumber. 2oz buddig ham

d- 5 turkey meatballs and half a sweet potato

s- low fat ice cream.

exercise, going to my first Zumba class, I need something more than 5 miles on the treadmill!

I've done Zumba classes. They were a lot of fun, but my hips don't swivel like they used to!
