What are you eating today (Wednesday) or yesterday?
Jack Frost came to visit last night, and I want to know what idiot invited him. He is NOT welcome here. This is the south! So go back, Jack! Go back to New Hampshire or Minnesota or somewhere else in the frozen north!
I got most of my chores and errands done yesterday, despite minor but time-consuming mishaps like dropping my keys in the car and not being able to find them. I found a nice guy to help me, who found the keys in about 59 seconds. He smiled as he handed them to me, probably thinking, "Another dumb blonde." And he wouldn't be completely wrong about that.
Back to work today. I woke up at 4:30 am (when my husband leaves for work) and couldn't fall back to sleep, so I will have been awake for 4 hours already when my shift starts. Would someone please tell me again why I stay at that job? Oh, wait, I remember now. Money. Bills. Shopping for size 10 clothes...stuff like that....
Today's food plan:
B: protein latte
S: the rest of the French toast, banana & peanut butter sandwich from yesterday morning (it was tasty, but slow going)
S: cinnamon oat breakfast cookie
L: leftover beef Stroganoff, a few red grapes
S: trail mix
S: raw sugar snap peas
D: flounder w/ cumin & lemon, roasted acorn squash, spinach salad w/ sesame & poppy seed dressing
S: almond, craisin & sesame seed snack mix
This morning's exercise class has been cancelled because everyone in the county seems to be suffering from upper respiratory and/or intestinal crud. So I'll just concentrate on stuff like climbing ladders in the shoe stockroom.

B: ricotta cheese pancakes with quick blueberry sauce, milk
S: hummus and carrots
L: chicken salad with dried apricots and almonds, milk

Exercise: planned to go zumba this morning, however the seahorse had different ideas. ugh. guess i'm on a treadmill today. it's cold out anyhow and i really don't feel like chiseling my car out to go swim in a pool and freeze.
certainly, but it's not my recipe. it comes from the book called Eating for Pregnancy, pgs 63-64
1 cup part-skim ricotta cheese
1 large egg
2 tablespoons sugar
1 tsp of pure vanilla extract
6 tbsp all-purpose flower
1 tbsp apricot jam or orange marmalade
1/2 tsp unsalted butter or canola, or cooking spray
Quick Blueberry Sauce**
mix ricotta cheese, egg, sugar, and vanilla in a bowl until smooth. add flour and marmalade/jam and mix until well blended.
melt the butter in a large nonstick pan (spray pan with cooking spray) over medium high heat. add 1 heaping soup spoonful of pancake batter for each pancake. cook for 1.5 to 2.5 minutes or until bottoms turn golden brown. flatten slightly with the back of the spoon; don't crowd pancakes onto the pan. with a wide spatula carefully flip each pancake and continue cooking until golden brown on the other side.
top the pancakes with blueberry sauce and serve immediately. yields nine 2 1/2 inch pancakes.
**Quick Blueberry Sauce
1 pint (2 cups) fresh blueberries, washed, or 8 oz frozen unsweetened blueberries (half a 16 oz bag)
1/3 cup sugar or to taste
Combine the blueberries and sugar in a saucepan and bring to a boil, stirring occasionally over high heat. Continue to coo****il the syrup has thickened slightly, about five minutes. Serve warm. Cover and refrigerate leftovers.
