What is DENSE MEAT ????
Are you sure you don't mean dense protein, which is meat. You want to eat dense protein first because it helps put sort of a "plug" or stopper at the bottom of your small tummy to help the food stay in your stomach long enough to activate the vagus nerve which tells you that you are full. Dense protein is more fiberous as opposed to say cottage cheese which would be a soft protein. Hope I explained it OK for you.
It used to be thought, as you say, that in order to dim hunger, food had to stay above the band for long enough to stimulate the vagus nerve. However, research has shown that food actually does not stay above the band for long, in fact, if you swallow a well chewed mouthful and then wait for a minute or so, it should mostly have passed through.
They now believe that th diminution of hunger is due not to the vagus nerve but to the oesophagus. Food descends partly by gravity but mainly by pushes made by the oesophageal walls. As the food reaches the band, it encounters the narrowing caused by the band and it requires not one but maybe three or four pushes to get the food through. Our brain is aware of this and so assumes more food has been swallowed than actually has been.
Some docs are still talking about keeping food above the band for 20 minutes but they are out of touch.

What you're referring to is "dense protein", not dense meat. Think of it this way: a protein shake, a piece of soft tofu and a piece of steak contain all protein.
The protein shake, being a liquid, will drain/digest out of your stomach faster than the soft tofu (a soft-ish protein) or far denser steak will. The steak will keep you feeling full longer than the protein shake and the tofu.
Solid cuts of beef, or other protein, will keep you feeling full longer than ground beef. You want to eat things that contain dense protein to keep that full feeling a long time.
