What are you eating today (Saturday) or yesterday?
It's another bright, shiny autumn morning here. And speaking of here, I want to address something that an OH member (who shall go nameless in this thread) has said to me several times. She calls me a hillbilly. Calling a resident of west Tennessee a hillbilly is amusing but inaccurate. There are no mountains or hills in the Mississippi River delta, and I lived in the Northeast for 46 years before moving to Tennessee. So it's time to dream up a new pejorative.
OK, moving right along...I don't have to be at wor****il 3:30 pm today. My cooking project for today is making zucchini chips. You slice the zucchini very thinly using a mandolin, brush the slices with olive oil, sprinkle them with salt (I'm using basil salt that I made from the last of our fresh basil), and bake them at 225F for 2 hours until they're dried out and crisp.
Today's eating plan is:
B: protein latte
S: cheese & zucchini omelet
S: cinnamon protein bread (kind of like a coffee cake)
L: black bean burger, tomato salad
S: almond, craisin & sesame seed snack mix
S: sugar snap peas (raw)
D: smoked turkey & cheese roll-up
S: trail mix
S: coconut blueberry oat breakfast cookie

exercises: going to get on my treadmill. almost got run over yesterday. that's enough walking around the neighborhood for me since the twits can't slow down and follow the posted speed limits.
I used to prefer walking outdoors because walking on a treadmill is boring, but I gave it up for the exact reason you did. Too many idiots speeding down a winding country lane (with deep ditches on both sides) like it's the Indianapolis 500.

Jean, just so you know, you can be a hillbilly with out hills. It is much better than being a redneck 'cause there is no cure for that. You know we love you.

Maybe so, but I'd like to see a demographic study on how many hillbilies graduated from college magn *** laude.

Bet I can guess who you are referring to...... You gave me a chuckle about your zucchini chips. My brother buys Kale Chips at the health food store and pays $8 for a little bag. So, I tried to make the same one time to prove to him that he could make them for a lot less. Wrong!! They burned up like leaves blowing out of a campfire. Of course, my talents in the kitchen leave much to be desired! I hope they turned out good!
$8 for a little bag?! We've made the kale chips many times, but you do have to keep an eye on them. They go from perfect to burnt in about 10 seconds.
The zucchini chips turned out awesome, but they didn't stay crisp after sitting in an airtight container for a few hours.
