Today’s food:

D: Turkish chicken, homemade bread “stuffing", broccoli & cauliflower
S: choco monkey protein balls
When I got home from work yesterday, I decided to make spiced nuts with some plain cashews I bought on Sunday, and ended up incinerating them because I got distracted by something in my study. The smell was terrible. I guess I forgot how easy it is to burn nuts.
Now I'm off to my WOW (women on weights) class, so y'all have a great day!

2 cups peanut butter (smooth or crunchy, reduced fat or regular)
2 scoops + 2 tbl chocolate protein powder
2 ripe bananas, mashed
chopped peanuts (optional)
Combine the ingredients in a large bowl, adding more protein powder if needed to achieve a stiff consistency (if it's too soft, the balls will be too sticky to handle).
Form the mixture into walnut-sized balls (you can flatten them into patty shapes if you like) and roll them in the chopped peanuts. Put them in a covered container, using waxed paper or parchment paper to separate the layers, and freeze for at least 2 hours. After the initial freezing, you can store them in the fridge or keep them in the refrigerator. At room temperature they still taste good but are too sticky to eat with your fingers.
Nutritional data will depend on your choice of peanut butter and protein powder. I got 16 balls out of a batch and used Unjury protein powder, so that's 75.9 calories and 3.4 grams protein per ball.

Dinner probably the same thing depends on how I feel
Exercise I did manage to get 30 min of Zumba in this morning . I just didnt feel good to do a whole 60 min today

D: shrimp bisque and garlic cheese biscuits (biscuits are mostly for the hubby)

Exercise: Well, does the two hours of food shopping I did today count as walking? :) Other than that I'll be getting together with my support group to do some track walking at the community center tonight. Hope that helps with the monstrous cramps I've got today. Eesh, want to rip out my guts. Midol isn't helping at all.
After a really challenging food day yesterday, I'm going to get back on a routine today!

Pulled pork with cole slaw
It is now 5:30 and I am not very hungry ..... Dinner might be a yogurt.
On Sunday, I got some boneless pork ribs on sale. I marinated them with a dry rub all day and then grilled them.
I was able to eat a few bites, but they were too tough. I almost through the rest of them in the trash.
Instead, I cut them into chunks and put them in the crockpot with some BBQ sauce and let them simmer all day.
Then, I was able to shred the meat and now I can eat it as pulled pork.
There is a place in North Carolina that makes. Killer BBQ pork sandwich on a roll with coleslaw ...I once ate 3 of them in one day ..... So good.
So, today, I mixed my coleslaw right into a scoop of the meat and it was almost the same!!
