What are you eating this Monday?

I'm glad to report that my eating went better yesterday (in terms of dumping if not hunger). Of course, it's always easier when I'm at home than when I'm at work.

This morning I'll do my favorite class of the week, step aerobics. My lower-carb food plan is:
B: protein latte
S: soft-boiled egg
S: cheese
L: ricotta cheesecake fluff (ricotta, sour cream, almond extract, & SF cheesecake pudding mix)
S: trail mix
S: almonds
D: oven-fried catfish, cabbage, carrots
S: WW peppermint patties

In case anyone missed my mention of it, a day's worth of food for me might look enormous, but since I can eat only a few bites at a time, in the end it adds up to maybe 1000 calories.

one 15-oz container part-skim ricotta cheese
2 tbl light sour cream
1 package SF/FF cheesecake pudding mix (or less, to taste)
1/4 tsp almond or vanilla extract
sweetener (to taste)

Mix it all together and enjoy! This is very good in stuffed strawberries, or with a spoonful of no-sugar-added preserves.
