I found a way to enjoy chicken again!!! [cooking tool]
I had to share... because I know I am not the only bandster out there who has a hard time with chicken. I honestly mostly avoided it... except for the occasional treat at ChikFilA where I got the nuggets, and they were moist enough I could eat them.
Well I just got a stoneware deep covered baker from Pampered Chef and I am IN LOVE with it. It is super super easy to cook in (I cook with it in the microwave) and the best part... chicken is super duper moist and I can eat it again!!
Example simple recipe:
1 onion sliced
3 bell peppers sliced (red, green, yellow)
2 chicken breast laid on top of sliced veggies
Season with your choice of southwest spices
Microwave for 18 minutes in the covered baker.
Slice chicken and you have chicken fajita!
I don't use the tortillas, I eat in a bowl with some homemade guacamole and salsa. Makes a delicious meal we BOTH enjoy. Hubby isn't banded and uses tortillas.
Last night I made a chicken chili in the baker. I threw a can of black beans, chickpeas, sweet corn, tomatoes, green chilis, and chicken into the baker. Used some chipotle and southwest spices and microwaved for 18 minutes. OMG. Best chicken chili. So yum-O.

Sounds yummy! I loves anything with salsa in it! I bet it also good with a dollop of lowfat sour cream and cheese on top of the moist chicken...mmmm
