What Are You Eating This Saturday ?
Yesterday went pretty good for a weekend night :o) I did get the munchies around 10 pm so I grabbed some Cheerios and ate some of them. Much better then eating chips lol.
Breakfast 5.5 oz of steak
Lunch either a piece of chicken or leftover Swiss mushroom burger
Dinner making a Taco Casserole
I have no idea what snacks will be today or if dinner is 100% or not. Depends if son is home for the night

lol Sue I have never made it before. If you want the recipe I can post it for you :o) It smells really good though .
I ended up skipping lunch , after my steak I wasn't hungry for a meal . My son did have Hot Pockets Snackers Potato skin bites I had three of them for a afternoon snack. They was okay not worth the price. Only reason I got them on sale and coupon and son likes this stuff.

Not a real good day for me.
E-Protein shake
B- pack of oatmeal and 1/2 banana
ran my third 5k , had a whole banana after the race.
L- 4 mini weigh****cher pizzas.
S- oops 2 clam cakes from Iggy's at Oakland beach -Warwick RI OMG they are good oops...
D- 2oz fish and half a sweet potato.
S- not sure if I should but maybe 1c nonfat yogurt with 1/4 granola
exercises- 5k and took my 5 year old grandson to fly a kite, lost the first one in a tree lol
Water, Decaf coffee and more water...

Here you go Sue this was so good last night I could have ate more lol. Glad there is a little bit of leftovers :o) I tweaked the recipe so it was a little bit more on the healthy side .
Taco Casserole
1lb of 85% lean ground beef
1 small onion chopped
1 cup of (8oz) bottle thick and smooth taco sauce
3/4 cup of water
1 can of diced green chilis (4oz)
1 pkg low sodium taco seasoning
1 pkg of taco shells
2 cups shredded mild cheddar cheese ( I used nacho and taco cheese )
Preheat oven to 375 Use Pam spray on 11x7 baking dish
Cook beef and onion and drain ,. Stir in taco sauce, taco seasoning, water and chilis. x. Cook over low heat for 3 to 4 min .
Layer half of crunched up taco shells on bottom of dish . Cover with half of meat mixture then add cheese. Keep repeating .
Bake till cheese is melted.
I added light sour cream on top when I served .
Makes 8 servings .
