Made great mini cupcake quiche!

I never cook so I nee impressed myself this morning!

Hash brown crust
Eggs, chicken, mushrooms, spinach, cheese and spice to flavor

Bake butter and hash brown mixture for 10 minutes, then add eggs and filling mixture and bake for another 10 minutes all at 350.

139 calories, 10.5 proteins for 3 mini muffins!

I love quiche! I'll have to try it with the hash browns at the bottom.

Someone on OH posted a quiche recipe a wk. or 2 ago that I have been wanting to try also. Like you, I don't cook very often though.
