Quick breakfast-one dish to wash!

I am old enough to remember when microwaves first got popular. We nuked everything! I had forgotten about scrambled eggs!

This morning I experimented. I put one large egg in a 12 oz coffee mug that I first sprayed with Pam. Stirred it up with a fork. Sliced up one Sorrento Sticksters Colby Jack cheese stick (70 calories, 7 g. protein) in with the egg. Added a little salt and pepper. Microwaved it for 45 seconds, then took it out and stirred it. Cooked for about 20 seconds more (you will have to play with the time according to your microwave and size of eggs) Warmed two Jimmy Dean turkey sausage links on a paper plate for 20 seconds (80 calories, 9 g. protein) Sliced them up in very small pieces and added them to my egg in the cup. Yummy. Washed the cup and fork and threw away the paper plate. Done!! Easy!! Breakfast in less than two minutes, prep and, and one dish to wash.

Let me know if you find a better way. I thought about adding a tablespoon of milk to make it creamier and using butter flavored Pam.  Might try that tomorrow.

Sounds yummy!

When I got my first microwave, back in 1987, it came with a free workshop on how to get the most out of your microwave. The first demonstration the instructor did was how to scramble an egg, but like you, I hadn't thought about nuking eggs for ages.

I think Shelly at theworldaccordingtoeggface.blogspot.com has some creative approaches to microwaved eggs.

 good tip about the jd sausage, 80 calories for 2, I'm going to look for them.

A serving size is listed as 3 links @120 calories, but 2 are plenty for me, and that amounts to 80 calories. I think the patties are different. Check the label.

Hungrygirl.com has many "egg in a mug" recipes.

Also you can find Turkey sausage already cooked and crumbled.  Their serving size is 2/3 of a cup (don't recall the calories), but I find that 1/3 is plenty.

I am always looking for new friends on here and new ideas. I would love to have you as a friend on my page. The cooked, crumbled Turkey sausage would be great for making a whole wheat totilla pizza! (Mouth watering now as I type!)

JD Turkey sausage is my friend.  Three links, 100 cals, low fat and of course nice protein.  I eat just that for breakfast all the time.  I can usually eat 5 or 6 and it keeps me for 4 hours no problem.  Microwave it in a small tupperware and then throw the top on and eat in the car on the way to work!
