Remembering Pepsi/Sue

I met Pepsi about three years ago while in New England. Lovely lady! She sent me her recipe for meat loaf ( much more of a US thing than a UK thing). I served it to friends who all loved it, took the recipe and in turn passed it on. As I copied it direct from my own recipe list, it was called Pepsi's Meat Loaf.

I told Sue that she was becoming famous in the UK and she thought it hilarious.

I got the recipe out today and rememberd her with sadness but a chuckle as well.

Kim, I'll dig it out again  tomorrow.  But I think it will be very " ordinary" to you. After I got Sue's, several other US people sent me recipes and they were all very similar. Basically ground beef, sausagemeat, onions,, crackers, pepper, ketchup. it's just that we don't do meat loaf much over here in the UK.

I was just thinking about Sue a few days ago. I'm glad you have her laughter as part of your memories of her.

At first I thought she was a cranky whiner until I learned about all the health issues she had. Then I understood since I'm not that healthy myself and it sure can make you grumpy sometimes. I remember at Christmas her SS didn't send anything and she was so down, I PMd Bette to see if I could send her something but it had already been covered and then some. She had quite a battle, but at least now she is healthier than she could ever imagine and no more pain. God bless her!

While preparing for this year's Secret Santa, I came across her name on the list from one of the past SSs. I got a pang reading her name. I wish I had gotten to know here so much better, especially since she was, geographically, so close, and especially near the end. I had no idea how bad things really had gotten for her.

Banded 10 years & maintaining my weight loss!! Any questions, message me.

Bette, did anyone on here really  know? I certainly  didn't.  But I took a few months away from OH so may just have missed it.
