Hey Jean-Tex Mex Stew!

Hi Jean-

just wanted to let you know that last night i made the tex mex stew....the hubby was a little leary of the tofu --but everyone enjoyed it!  the rest of the family added the rice i made to the stew and all said "you can make this again!".

it was in Jean's cookbook, so i don't feel comfortable copying it here...  but it's an excellent cookbook!
