If you are cooking for just the 2 of you, do you really need a replacement?
At Thanksgiving, I usually eat 3oz of turkey meat with gravy and a few spoonfuls of whatever looks good
If you are cooking for a group, why not do as you usually do (make the pasta course for them) and just not eat that if you don't want to.

i usually grate zuchini lenghwise and heat in pan. just takes about 2 minutes. Then I spoon on the marina or meat sauce as I serve with salad. Got the idea from Emeril. Tastes remarkably like spaghetti. You can also put some chicken base or a table spoon of chicken broth while heating zuchini to give it more flavor..just like with spaghetti.
Krystal..thx for the idea! Really appreciate!! Sounds like a great dinner too!!
Kath...no it is not just the two of us....it is 20 people and since I am doing the cooking and expence I thought it would be nice to enjoy. Also thought a few other people out there might like to share ideas!!
Anyone who would like to share keep the ideas coming!!

I love this question. One thing is spaghetti squa**** is super easy, super good for you, and super yummy. The next is Cauliflower. You can make a great Faux southern potato salad with Cauliflower or a Faux Mac and Cheese. Really you can uses cauliflower for anything using smaller noodles and Spaghetti squash for anything needing longer noodles.
