old bay has a blackening seasoning rub - it's awesome.
another trick i learned - works good for single servings, take your fish (rub it with your choice of oil/herbs/citrus) and place inside a brown "oiled" bag (you know like the lunch bag type). bake low @ 325 for about 10/12 minutes and your fish is SO moist.
can't remember where i learned this - but it's my go to when not grilling my fish.

Thanks Redbabe !! I saw that black seasoning rub today at Kroger's and looked at it and put it back lol. I will put that on my list to pick when I go in .
Paper bag that is different.I have never heard of that one before I will have to try that also :o)

We love blackened fish and I make it frequently. Buy blackened seafood seasoning and follow directions. You can eat alone or wrap up in a tortilla and make a fish taco and fill up with all your favorite veggies. Yummy!!
I also like to grille fish on the gas grille. White fish you have to be careful because it will break apart. I just season with garlic, salt and pepper and place on foil.
We also love salmon but you said it is too fishy. Have you tried fresh salmon from the market? I can't eat the frozen kind. Rinse fresh fillet, marinate in Kraft zesty Italian dressing for a couple of hours and place on heated grille (spray with Pam first) skin side down. So good!!
