New (to me) food find

Trader Joe's Turkey Meatloaf Muffins

There are 4 in a box -- they are little meatloafs topped with a little spinach and parmesean mashed potatoes

They are 220 calories, 13 grams of protein 1 gram of fiber and 13 grams of fat

Small -- but filling when paired with 1/2 cup of veggie --- and convenient

OMG! they sound yummy!!! Although I'm drooling over everything because I've just started pureed foods on Tues.
I will have to check those out!

Funny,, I just read about them, I don't have TJ here in Florida but someone tastetested a bunch of items and they said those are the worse thing they ever put in their mouth,

I find pre-made meatloaf a little dry.  Are these one on the dry side or do they go down fairly easy?

Love them, perfect to take for lunch and no, they're fairly moist with the potatoes and spinach on top.  Thanks for the reminder, I'll have to pick these up I had forgotten about them

I haven't been to Trader Joe's for a few months, I will have to look for those!  They sound good.

Next time I'm there I'm going to look for those!  Sounds perfect!

Something I've found useful when heating up leftovers and may help with the dryness on those meatloaf muffins (if that's a problem)...

Put them in a pan or baking dish with like 1/4 cup of water or wine.  Cover with aluminum foil TIGHTLY and reheat.  The steam you create keeps everything nice and moist and tender.  Then uncover and allow it to crisp up for a few minutes (if it's something that needs to be a little crisped on the outside).

I can't stand microwave re-heated food but sometimes thing like leftover burgers and chicken can get too dry when you reheat them in the over so this is what I've figured out and it works REALLY well!!  Using wine or beer or chicken stock instead of water adds a great little zip of flavor to chicken, pork and burgers too!!
