What Are We Eating Wednesday..Happy HUMP Day

Early:       2 coffees with creamer (lite)
Breakfast:  1 soft cooked micro egg, 1 turkey bacon, 1/2 turkey sausage link, toast
Lunch:      1 chp. bar-b-que pork sand (meat only) and 5 fries (they were yuk)
Snack:      2 1/2 meatballs in marinara
Dinner:     whole wheat pasta (1/4 cup), 2 meatballs, veggies
      2 mile walk (break in the hot weather here AND Zumba canceled:(
Snack:      Protein shake, either Atkins or BSN Lean Desserts, choc fudge

 happy hump day all!  Crazy rain, thunder, and lightening here!

early: starbucks iced coffee with milk and equal

breakfast: watermelon, cantaloupe, and a hard boiled egg

lunch: 1/2 cup of chicken salad I made from rotisserie chicken

d: spaghetti squash lasagna.... OMG... super, super yum!!!!  =)

lots of water and decaf crystal light iced tea

wii zumba for an hour and 30 minutes on my elliptical



all the weight has been lost post-op..I LOVE MY BAND!!!!!!!!!!!!!!!!!

highest weight: 333 pounds (I know I gained after my last "weigh in" in the doctors office so probably it's more like 340 pounds)
current weight: 151 pounds (7/12/11)
I've been at goal (165 pounds) for 6 months now and now on maintence.  I tend to go up and down depending on time of the month and such!

I like Foster Farms turkey meatballs from walmart or safeway.

 Turkey meatballs (already cooked) from Trader Joe's in the frozen food section....

here is the recipe for spaghetti squash lasagna...
  • 1 spaghetti squash, halved lengthwise and seeded
  • 3/4 pound of lean ground turkey meat
  • 1 onion, chopped
  • 2 tablespoons minced garlic
  • 2 (14 ounce) cans stewed tomatoes
  • 1 tablespoon dried basil
  • 1 cube vegetable bouillon
  • black pepper to taste
  • 1 cup shredded mozzarella cheese (reduced fat)
  •  
  • 1 cup shredded Parmesan cheese (reduced fat, low sodium)

  1. Preheat oven to 325 degrees F (165 degrees C). Spray a baking sheet with a thin layer of cooking spray. Place squash halves cut side down on the baking sheet.
  2. Bake squash 35 minutes in the preheated oven, or until a knife can be easily inserted. Remove from oven, and cool.
  3. Meanwhile, spray a non-stick saucepan with cooking spray. Over medium heat, saute the ground turkey until brown and drain off the excess oil.  then in the same pan, saute the onion and garli****il golden brown. Stir in the turkey, tomatoes, basil, bouillon cube, and black pepper. Cook for about 15 minutes, or until you have a medium thick sauce.
  4. Remove squash strands with a fork, reserving the shells. Layer each half with a spoonful of the sauce, a layer of spaghetti squash strands, and mozzarella cheese. Repeat layers until shells are full, or until all of the ingredients are used. Top with Parmesan cheese.
  5. Bake for 20 minutes in the preheated oven, or until Parmesan cheese melts.

Early: Coffee f/f half/half, s/f choc, s/f pnut butter syrups

B:  1 egg & 1/4 cup egg white scrambled with broccoli, onion, mushroom, cherry tomatoe & wedge of laughing cow cheese.  About 1/2 of a Magic Pop for crunch.

post workout: 1/2 scoop syntrax in crystal light

L:  3oz baked salmon & 1/2 cup broccoli, 1 bag 100 cal popchips

Snack:  fiber one 90 cal bar

Pre Kickboxing:    Dr. Kracker & laughing cow

S: Pan seared Tuna, 3oz;   Cauliflower 1/2 cup.

bedtime: 1/2 supreme protein snack size bar

Exercise:
Body Pump 170 cal, hr 134
Body Pump 210 cal, hr 128  (yes, I went to Pump twice.. RPM didn't make)
Boot Camp 377 cal, HR 160
Kickboxing 310 cal, HR 142

I'm sleepy.. headed to bed so I can go to Pilates, then Step and then I get a totally indulgent hair, mani & pedi day....   wooohooo!!
