Recipe - Ridonkulous Dessert...and Super Easy!
So yeah, a lot of you know that I like to get creative with my foods and make WLS-friendly recipes for foods I've always loved. Hey, I've been on maintenance for 18 months and I need variety to stay on track. LOL :)
Peanut Butter Cinnamon Crisps
1 Lavash Wrap (or 2 low-carb/high fiber tortillas)
Olive Oil
Cinnamon
Sweet-n-Low
2 Tablespoons Peanut Butter of Choice (I have used PB2 and Better'N Peanut Butter, but any peanut butter will work)
Optional: Honey (I use Nature's Hollow Sugar-Free Honey but again, whatever you normally use will work)
Optional: Bananas
Preheat oven to 425 and line a cookie sheet with tinfoil. Place your wrap or tortillas on a paper towel. Brush a *light* layer of olive oil on the wrap or tortillas (only one side is necessary). Sprinkle cinnamon and Sweet-n-Low on top to your liking (I like mine really sweet lol). Using a pizza cutter, slice your wrap into 1/4ths, then into triangles. For the tortillas, just slice them like a pizza. Arrange on cookie sheet.
Bake at 400 for 9 minutes for wrap, 12 minutes for tortillas (they are a bit thicker and take longer to crisp).
Remove from oven. Carefully spread the peanut butter evenly amongst your slices.
Optional (but not to me lol): Slice a banana into very thin slices and place them into the peanut butter. Drizzle a *small* amount of honey over the top of these babies. Delish.
Sidenote: I have been making my own "chips" like this for 2 years. I usually make a batch of these on Sunday afternoon and then I have them handy for a healthy snack throughout the week. To make "chips", omit the cinnamon and sugar (and dessert toppings lol) and use seasoning salt & pepper or whatever else you crave (BBQ seasoning, lemon-pepper seasoning, just plain old salt, chili powder, etc.). Make a delicious dip using 0% plain greek yogurt, a drop of lemon juice, salt, pepper & dill weed (tastes like tzatziki sauce!) or mix the yogurt with Hidden Valley Ranch powdered mix for Ranch Dip.

I bought some of the Lavash wrap after one of your previous posts and made some really good spinach artichoke dip to go with my "lavash chips". It was wonderful!! YUMMY Great idea, using the cinnamon/sugar too!

I make savory "chips" too, but haven't tried sweet ones. After reading your recipe, the sweet version is next on my list of things to try. Can't go wrong with peanut butter & banana! And I think I have some reduced-sugar Hershey's syrup in the cupboard to drizzle over the bananas...
