Happy Band Friday? What Are We Eating Today?

It's not much, but here are my eats for today thus far:
Early: 1/2 protein shake - 1/2 scoop BSN Lean Desserts (Whipped Vanilla Cream), 1T PB2, 1/2c Unsweetened Vanilla Almond Milk
B: 1 Ricotta Cheese Pancake (ate about 1/2 of it), 4 fresh sliced strawberries, 1T SF Honey
S: N /A
L: Egg Drop Soup - 1c Low-Sodium Chicken Broth, 1 egg, splash of Low-Sodium Soy Sauce
S: 1/2c SF Cheesecake Pudding, 2 fresh sliced strawberries
D: Not sure
Dessert: Probably not, but if so it will be 1/2c 0% Plain Greek Yogurt with 1T of SF DaVinci Syrup

This is the recipe for one serving of cottage cheese pancake ... up it to your liking...
1 heaping tablespoon wheat flour
couple pinches of baking soda
1 tablespoon of whey unflavored protein powder (can skip this if like)
2-3 packets splenda or preferred sweetener
1 jumbo egg white or 2 small egg whites
1/4 cup cottage cheese
4 tablespoon FF milk or skim milk
4 drops olive oil
Cinnamon to taste or a few drops vanilla extract
Cooking spray (I use butter flavor or just spread olive oil over pan)
In a small or medium bowl, whisk together all ingredients until completely blended. Spray skillet or griddle with cooking spray or spread olive oil over it then heat over medium heat. Pour mixture in. Cook, flipping pancake until golden brown on both sides and cooked
through, about 3-4 minutes total. Bon-appetit!
Serve and pour teaspoonful or tbs of SF maple syrup or any SF syrup of your preference.
