Lap-Band Friendly Recipe: Slow-Cooker Greek Chicken

Got mine in the crockpot now. Whole chicken breasts were on sale, so I just skinned and deboned 6 of 'em.  threw the  leftover bones in a pot with 3 whole breasts & some celery to make chicken salad for later this week.

I remembered that I have some salt-free Cavendars Greek Seasoning, so I used that to season the chicken before browning.

Also used Kalamata Olive pieces so I could get more in there with the 1/4 cup.. LOL

We'll see how it turns out.  :)

So, what's the verdict?  I bet the Greek Seasonings really added a nice bite to it.

Very good and very tender.  I think it will become a regular addition to the repretoire (spelling?).  Even my DD liked it and she's really picky about new foods.
