Lap-Band Friendly Recipe: Slow-Cooker Greek Chicken
Slow-Cooker Greek Chicken
6 Boneless, Skinless Chicken Breasts
1/2t Salt
1/2t Pepper
1T Olive Oil
1/2c Low-Sodium Chicken Broth
1 Lemon, Thinly Sliced
1/4c Pitted Kalamata Olives (Optional - but yummy!)
1/2t Dried Oregano Leaves
1 Clove Garlic, Minced
1. Heat Olive Oil in Large Frying Pan over Medium-High heat. Sprinkle all sides of chicken breasts with salt and pepper. Brown chicken on all sides but do not cook it all the way through.
2. Place chicken in Slow-Cooker. In this order: Add broth, olives (if you choose), minced garlic, oregano (do not stir). Lay lemon slices on top of chicken.
3. Cover. Cook on Low 4-6 hours or until chicken is tender (FYI - mine cooks kind of fast on low so I only cook for 4 hours and stop when I see the liquid is almost gone).
I sprinkle it with feta cheese and serve it with Rice Pilaf or Orzo & garlic-oregano green beans for my family. For me, I usually add a small Greek Salad with spinach, tomato, feta cheese & cukes.
I also make a homemade Greek Tzatziki sauce for dipping the chicken made with 0% Plain Greek Yogurt, dash of garlic powder, squeeze of lemon juice, cracked black pepper, lots of dried dill weed...and let it "set" for a couple of hours before dinner is ready to get the flavor of those spices throughout the yogurt.
BTW...It makes a lot of leftovers that don't last long in my house!!!

So, how did I do? LOL...is it *kind-of* like a real Greek Chicken recipe? Greek is one of my fave foods and I can digest gyro meat beautifully since I was 4 months out! I would have been devastated if I couldn't, but it is tender enough and chews like meatloaf so it works. *LOVE*
