Headed to L.A. tomorrow morning with my besties for a fun day in Hollywood.  OMG I can't wait!  Took a day off today to have a *me* day (nails, pedicure, haircut, shopping, airbrush tan, etc.). Instant 4-day weekend LOL.

Early: BSN Lean Desserts Protein Powder (Whipped Vanilla Cream flavor), 2T PB2, 1T SF Coconut syrup, 1T SF Peach syrup 2T Fiber Sprinkles, Ice

B:
1/2c Flax Snax Hot Cereal (Blueberries-n-Cream), 1/2c water, 1/2c skim milk

S: 1/2c Protein Ice Cream (Chocolate Fudge-Coconut flavor)

L:
3/4c LF Ricotta, 1/4c SF Spaghetti Sauce, 1T shredded Mozarella Cheese, sprinkle of parmesan

S: 2.5oz chopped avocado, 1T shredded Cheddar Cheese, 1t dijon mustard, 1T Balsamic Vinegarette, sprinkle of parmesan

D: 3oz Slow-Cooker Greek Chicken, 1.5c fresh spinach, 1T Feta Cheese, 2 black olives, 2T FF Balsamic Dressing

Dessert:
1c 0% Plain Fage, 1T Coconut SF Syrup, 1T Pineapple SF Syrup, 1T Fiber Sprinkles

How do you make your Greek Chicken? I love the ricotta and speg sauce! Looking to expand my recipe collection.

Slow-Cooker Greek Chicken

6 Boneless, Skinless Chicken Breasts
1/2t Salt
1/2t Pepper
1T Olive Oil
1/2c Low-Sodium Chicken Broth
1 Lemon, Thinly Sliced
1/4c Pitted Kalamata Olives (Optional - but yummy!)
1/2t Dried Oregano Leaves
1 Clove Garlic, Minced

1.  Heat Olive Oil in Large Frying Pan over Medium-High heat. Sprinkle all sides of chicken breasts with salt and pepper.  Brown chicken on all sides but do not cook it all the way through.

2.  Place chicken in Slow-Cooker.  In this order: Add broth, olives (if you choose), minced garlic, oregano (do not stir).  Lay lemon slices on top of chicken.

3.  Cover.  Cook on Low 4-6 hours or until chicken is tender (FYI - mine cooks kind of fast on low so I only cook for 4 hours and stop when I see the liquid is almost gone).

I sprinkle it with feta cheese and serve it with Rice Pilaf or Orzo & garlic-oregano green beans for my family.  For me, I usually add a small Greek Salad with spinach, tomato, feta cheese & cukes.

I also make a homemade Greek Tzatziki sauce for dipping the chicken made with 0% Plain Greek Yogurt, dash of garlic powder, squeeze of lemon juice, cracked black pepper, lots of dried dill weed...and let it "set" for a couple of hours before dinner is ready to get the flavor of those spices throughout the yogurt.

BTW...It makes a lot of leftovers that don't last long in my house!!! I heart my crock pot! Hope that helps. :)

Lunch: Activia yogurt and a baby bell
Snack: Chocolate Fudge Lean Dessert with coconut sf syrup
Dinner: 2 small squares of pizza, spinach mix salad with olives and tomatoes
