What I'm Eating Today - TGIF Edition!!!
Yay - that's more like it!!!
Liz - the salsa chicken is one of my favorites. It's easy, low fat and delicious! It's cooked in the crockpot, which keeps the chicken super moist and tender. For those of you who have issues with chicken breast, TRY THIS! I guarantee you'll be able to eat it with no problems.
Crock Pot Salsa Chicken
2 lbs. frozen chicken breast (no skin or bone)
1 jar of your favorite salsa (16 oz)
1 8 oz. brick of fat free cream cheese
Cumin (to taste - maybe 2 - 3 teaspoons?)
Optional additions (I use all of them!)
1 can black beans, drained and rinsed
1 can yellow corn
1 small can diced green chilies
Put chicken breast in your crockpot. Top with all other ingredients EXCEPT cream cheese. Cook on low for 7 hours. Shred chicken with 2 forks and mix everything well. Top with cream cheese (just put the whole block right on top), cover and cook on low an additional 1 hour. Stir everything together and serve.
This is great plain, with rice, corn tortillas, or over salad. I usually just eat it plain. It also freezes very well, so I freeze leftovers in 2 cup containers and pull them out when I need quick lunches.

Dessert: 4 fresh strawberries, 1T SF Simple Syrup, squeeze of lemon juice

11am (post workout) 1/2 scoop Syntrax Pink Grapefruit Protein mix in 8oz water
2:30pm L 4oz Turkey Taco Meatloaf, 2 cups bagged lettuce salad, 8 sunburst tomatoes, 2 Tbspn Light Italian dressing.
5pm S 4oz apple slices, 1 ww string cheese, 2/3 Dr. Kracker Pumpkin seed/cheddar cracker.
8pm D 1 cup leftover turkey taco soup, 11 tortilla chips
Now fighting mouth hunger.. full, but my mouth wants flavor!
