1/4 cup egg beaters (35ish calories)

1 thin slice of Healthy Ones oven roasted deli turkey (40ish calories) 

1 light laughing cow cheese (35ish calories)

Spread the egg around in a large hot pan

Spread the cheese on the slice of turkey, carefully!

Cook the egg until you can just get the edges up, lay the turkey on the egg, roll it up in the pan and plate it.

Delicious and high in protein!

I have been hesitant to try that laughing cow cheese.  What does it taste like?  Is it like cream cheese?  As you can tell I'm not very good at trying new food.  I have to KNOW what I'm in for before I will put it my mouth...hahaha

Yummy...it's like light cream cheese. It is processed cheese, but great to keep on hand for a mid-afternoon snack with 4 or 5 wheat thins.

PS: Costco sells it in a 4 or 5 "wheel" package for around $9...so essentially you get 2 or 3 wheels free and it keeps.

I love laughing cow.. I buy my deli meat from the deli counter low sodium ham or turkey
two ways I use laughing cow.

1/2 piece of a sandwich thin toasted.. let it cool for a few seconds.. spread 1 wedge of creamy swiss light the only kind I really like.. then add 2 pieces of turkey

or spread the cheese directly on my deli ham...

My friend likes it with her apples and pears but I'm not a cheese ON fruit person.. lol

I don't like cheese on fruit either, always thought I was weird.
