Easy chili recipe anyone??

  I want to make chili... but finding 10 different kinds of beans and special things for an amazing chili is really hard here in Korea... is there a delicious, yet EASY, recipe for chili that doesn't involve a slow cooker?
Thanks for any tips!

When I make chili I never make it the same.  For any slowcooker recipie you can always do it on the stove in a pot (it just takes less time). 

I usually toss in a couple of cans of beans (or soak the dry beans overnight).  My favourite are white beans and kidney beans. 

To this I add either 3 cups of diced tomatoes or a large can of diced tomatoes, a green pepper diced, an onion diced, diced mushrooms, lots of garlic, any other veggies I have hanging around, a tablespoon or more of chili powder, 1/2 lb of ground turkey and I usually add a teaspoon of peanut butter (which you won't have over there if I remember correctly).  The PB cuts the acid from the tomatoes.

Oops...Sorry.  I guess I kinda left you hanging.

Toss everything into a large pot and bring to a boil.  Then turn down the burner to low so it is still bubbling a bit and let cook for about an hour.  You don't even  have to cook the meat prior as long as it boils/bubbles for 30 minutes.  Super easy!

Basic Meat
1lb grnd beef or turkey (try to get 90/10 if possible)
3/4 cup onion, chopped
3/4 cup bell peppers, chopped
OR use 12oz bag frozen onions & peppers...
1 or 2 garlic cloves, minced (chopped finely)

Cook all the above together until meat is brown & crumbly.  Drain.  Return to pot

Now.. here comes the part where you can get creative...

Taco Chili:

1 pkg taco mix
1 pkg ranch dressing mix (not the pre-made dressing, but the powder)
2 or 3 cans rotel tomatoes (diced tomatoes with jalapenos)
1 can black beans, (drained & rinsed)
2 cans pinto beans (drained & rinsed)
1 cup frozen or canned whole kernel corn.
water to get to desired thickness.

Plain Chili
2 Tbspns Chili Powder
1 tsp Cumin
2 or 3 cans diced tomatoes (or you could use Rotel type tomatoes)
2 or 3 cans red or kidney beans, drained & rinsed
1 cup frozen or canned whole kernel corn (optional)
water as desired


Chose either plain chili or taco chili and add to the basic grnd meat.  Simmer for a couple of hours.  May need to add water along the way.  Taste & see if spices need to be adjusted.

I don't add salt when cooking, so you'd have to use your own best judgement there.

If the beans are drained & rinsed, it helps in 2 ways... 1) less sodium in the dish and 2) helps cut down on the gassey affects of beans.

Good luck.   I'm doing this off the top of my head, so I hope I didn't leave anything out.   My family LOVES the taco chili.

White Chicken Chili:

2 cans of chicken (or 4 skinless chicken breasts cut up in small pieces)
2 cans of white cannellini (white kidney beans)
1 tsp cumin
1 tsp paprika
1 tsp oregano
1/2 tsp salt
1/2 tsp chili powder
2 whole cloves
1 1/2 cups of chicken broth.
1 onion cut up in small pieces
1 tbsp minced garlic (I buy the jarred-works for me)
McCormick white chicken chili packed (if you can find it- if not, add more cumin & chili powder to taste)
1 bay leaf
To thicken it up I sometimes mush some of the beans or add a little flour (Wondra)

First brown the onion and garlic at the bottom of the pot, then add the chicken broth, canned chicken (or chicken breast) and begin to add spices and simmer for 45 minutes. Add the beans last. I add the entire can, juice and all because it adds flavor and fluid to the chili. Simmer for another 30 minutes and enjoy.

This is very easy & quick recipe to make Elena! I make it once a week! I just do it on my stove in a pot, no slow cooker required.

I know you asked for traditional chili recipes, but I thought you'd like something a little different! Enjoy!

all the weight has been lost post-op..I LOVE MY BAND!!!!!!!!!!!!!!!!!

highest weight: 333 pounds (I know I gained after my last "weigh in" in the doctors office so probably it's more like 340 pounds)
current weight: 151 pounds (7/12/11)
I've been at goal (165 pounds) for 6 months now and now on maintence.  I tend to go up and down depending on time of the month and such!

OK here is SUPER easy chili as I am cooking impaired myself . LOL

1 pkg McCormicks (found in pwdr gravy section) chili seasoning
1 lb lean ground beef or turky or chicken
2 cans red kidney beans -drained
1 lg can crushed tomoatoes

** brown ground beef then add seasoning then a little water( maybe a 1/4 cup) to mix it all in good then add rest of ingredients and let it simmer as long as you like .

** not sure you can get the McCormicks seasoning over there but if so it makes things super easy!

I do mine  kinda the same way

1 McCormicks  chili seasoing
1 can mild rotell
1 pound lean meat
1 large can pinto beans

cook hambuger
add beans, rotell, seasoning do not drain beans or rotell I ake this 1 time a week

Those are some great recipes!  When I'm making chili, (unless it's white chili, that's totally different) I like to add a can of light beer.  The flavor it adds is fantastic and the alcohol cooks out if you are worried about that.  It just gives it a little something extra!
