Greek Yogurt Question

Hey there!

So I love to cook and I'm re-tooling lots of my recipes to make them more band-friendly (i.e. lower the carbs and trying to up the protein) and to follow the rules of "Real Food" eating.  I've been incorporating Greek Yogurt in lots of my cold recipes in place of things like sour cream and mayo but I haven't yet actually COOKED with it because I wasn't sure how it would do.

Does it seperate when it gets hot or does it behave like sour cream and stay creamy?

That's a good question. I never expose Greek yogurt to high heat - so I haven't had it separate on me when heated.

It's never separated for me!

Highest 290, Banded - 248   Lowest 139 (too thin!). Comfort zone 155-165.

Happily banded since May 2006.  Regain of 28lbs 2013-14.  ALL GONE!

But some has returned! Up to 175, argh! Off we go again,

What sort of cooking did you do with it?  Like, how hot did you get it?

I've used it instead of normal yog in baked curries and in sauces instead of cream. So slow baked in a casserole in the oven and warmed in a frying pan with meat juices etc.
