silly question about hard boiled eggs...

How long are they good for? Do you hard boil a bunch up at a time... or as you go? Can you peel them and store them peeled?

I want to make some and stuff them with hummus for a snack, but I always forget to boil them and run out of time. I wanted to boil some up tonight for the week... but I am weird about food sitting in my fridge for a few days. Whats the rule of thumb?

I boil eggs every weekend to have throughout the next week for work.  Once they're cooked and in the shell I think they'll last for 5 days or so.  I think once they are peeled they don't last as long maybe 2-3 days if they're stored in an airtight container.  I usually eat a few plain and then make the rest into egg salad.

That's just my opinion.  No science, just what I do.

I keep it pretty simple, but there are a lot of variations.  I chop hard boiled eggs and add the new mayo made with olive oil.  You can use FF or lowfat mayo, etc.  I add a little mustard and mix.  I eat it by it's self or with a whole grain cracker, etc.  You can also add the following:  dill, or celery, or pickle, relish, smokey paprika, etc. 

Make sure you go easy on the mayo because it adds a lot of calories and if you have cholesterol issues, it may not be the best choice unless you make it only with the egg whites which is better for you.

I made some this week using that Mayo with Olive pil and a can of Albacore tuna. YUMM-O!

Thanks gals as I love my hard boiled eggs. They don't last in my fridge more than a week as I love them. I am on my 10th day of pre-op and I am craving my eggs! Ummmm.
