Is it a huge difference?  No, not at all.  But if I'm not going to be eating but a half cup to a cup of food at a meal, I want to get the most benefit out of it that I possibly can.  So those differences in the nutrients make a difference to me.

I miss my salads. I can not wait until I can have salad again. Sounds like I may have to test a few different kinds of lettuce to see which works best for me. What has been the easiest for everyone to get down?

I am, in fact, sitting here eating my daily salad for lunch as I read OH.   Spinach, English cucumber, cherry tomatoes, red pepper, crumbled feta and about 4 oz of chicken.  Couple squirts of raspberry vinaigrette and 2 tbs of ground flax sprinkled on top.  I eat this every day Mon-Fri with the only variation being the protein - sometimes chicken, sometimes tuna.  Have never gotten stuck on any of it.  And I realized the other day that I used to salivate at the thought of the big italian-meat panninni from the corner deli that I often used to eat for lunch.  Now I salivate at the thought of my salad (which I bring from home every day, saving myself a ton o' $$ to boot).

That salad sounds INSANELY delicious.  I've just written this down and as soon as I'm able to have all those things, I will be shamelessly copying your salad recipe!!
