Zucchini Soup!
This was so good, even my 6 year old loved it! I cooked a medium onion and large zucchini chunked up in a teaspoon of oil until they were transparent, then I added 2 tablespoons of flower and cooked it a little, then I added a box of chicken stock and brought to a boil. Then blended all of it and added 1can of 98% ff cream of chicken soup and 1 can 98% ff cream of mushroom. Add salt and pepper to taste. It was amazing. I hardly have any left! It makes a big pot too! So if you have a bunch of zucchini around, like me, try this. I'm going to grill more zucchini this evening for dinner. I love this time of year. Enjoy!
That sounds really good too! I forgot I added a couple teaspoons of garlic ( from the jar) too to the soup. I love fried zucchini, but I think I'll have to pass on that this summer. My grandma had a wonderful recipe for zucchini bread, you wouldn't even know there was zucchini in it, but that has way too many calories too and I would be the one to eat it, I'm sure. I have good restriction, but for some weird reason, I can eat bread. Not that I'm going to though, at least not zucchini bread. Good luck!
I like to grate Zucchini and add salt, pepper, garlic powder, an egg and just enough whole wheat flour to makes it stick together. In shallow skillrt with just a little Olive Oil spoon small scoops and fry on each side. I leave the skin on the Zucs if possible to get even more nutrients.

I love zucchini, I make a stuffed zucchini, I slice lengthwise, scoop out the seeds, for the filling I mix cottage cheese, parmesan cheese and an egg ( alot like what you would for lasagna), salt and pepper to taste then bake in the oven for 10 -20 minutes . I also slice it, and put seasonings, garlic (from the jar also) and onion in a foil packet and put on the grill for about 10 minutes. I also use it as a replacement for eggplant (I can't stand eggplant) in most recipes that call for it. If you have an over abundance of zucchini, you can grate it and freeze for use thru the winter.

Your soup sounds wonderful too. I live in Alaska and zucchini like potatoes grow like weeds here, my dad usually grows huge zucchini ( the size of a small watermelon) those are the ones that I usually grate and freeze. Also the stuffed zucchini is wonderful with fresh salmon. My brother is fishing for salmon this weekend and I will have have fresh salmon for the first time in four years. I can't wait.
I tried your soup receipe, my grandkids loved it too. I really like this, I am going to try and freeze it and see how the leftovers hold up on reheating.

Great! I'm glad you liked it. How was the salmon? I would love to be in your neck of the woods! I would be living there now, if I hadn't met my husband. I'm an SLP and they have really good insentives when I graduated colledge to go out to Alaska. My husband is a teacher in the same school district that I teach, so things worked out really well. But I'd love to see Alaska! You're lucky! Take Care!
I haven't had the salmon yet, I will get it this weekend when I go to my dad's. They are having their fair this weekend so I will be spending the weekend with my dad and brother. I am taking my two grandkids that live with me also. If you ever get to visit Alaska, let me know, I am not planning on leaving the state again. I just might be moving back to Delta where my dad is.
