BANANA STRAWBERRY CREAM
1 large banana
1 1/4 cups fresh, hulled strawberries
1/4 c. no sugar added vanilla yogurt
1. place the banana, peel and all in a zip lock bag and freeze overnight. Do the same with the strawberries in a seperate bag.
2. the next day remove the fruit from the freezer, let stand at room temperature for 10 to 15 minutes. Place fruit in a blender or food processor, breaking the banana into pieces if necessary. Add yogurt, blend or process on high speed until mixture is smooth and creamy
3. pour equal amounts into 4 cups.

MINI MEAT LOAVES
1 lb lean ground turkey breast
3/4 lb lean ground boneless pork loin
1 medium onion, finely diced
1/2 large red pepper, finely diced
2 cloves garlic, minced
3/4 c. rolled oats
3 egg whites
2 Tbsp. minced parsley
1 tsp. dried oregano
1/2 tsp dried basil
salt n pepper to taste
1 15 oz can diced tomatoes
1. preheat oven to 350 F, combine all ingridents except tomatoes, mix well.
2. spray a 12 cup muffin pan with cooking spray. Divide the meat mixture into 12 equal portions to fill each muffin cup. Bake for 25 minutes.
3. spoon equal amounts of diced tomatoes OR tomato sauce over each mini loaf, bake an additional 20 minutes.
4. remove the pan from the oven and let it sit for 10 minutes, remove the mini loaves from the pan.
serving size: 2 mini loaves

Mmmmmmm SALMON! This one looks like a gourmet meal and it is very easy to prepare!
Seared Salmon with Mango Salsa
4 4oz salmon fillets
salt n pepper to taste
cooking spray
SALSA:
2 small mangos, peeled and chopped into one inch cubes ( I buy it already cubed in jars, just chop it smaller)
3 Tbsp minced red bell pepper
3 Tbsp minced red onion
2 Tbsp minced cilantro
2 Tbsp fresh lime juice
2 tsp minced jalapeno pepper ( I leave this off)
1 tsp. Splenda or sugar
1. Preheat oven to 350 F, sprinkle salmon with salt n pepper
2. Spray a large skillet with cooking spray, Heat the skillet over medium-high heat. Add the salmon, skin side down, sear for 3 minutes, turn the salmon over and repeat on the other side. Place the salmon in the oven and bake 4 to 5 minutes longer.
3. Combine all ingridents for the salsa in a medium bowl, serve with the seared salmon.
serving size: 1 salmon fillet and 1/2 c. of salsa

What a worthless jerk! I had a guy sort of do that to me one time. I had left a few things at his house and I was working the graveyard shift and when I went out to go to work, he had put all my stuff on top of my car....including some makeup that was melted all over the roof of my car. Not only did it ruin a lot of stuff, but I know my nosy neighbors at the time got to see him put all that crap on top of my car. How embarrassing.
Give her a big hug from me. If I had a dollar for every worthless man I've been with, I could buy a motorhome and take off across the country.
Did you get to WW this morning? I'd hate to have to go make a special trip to weigh. Of course, I have to drive to Decatur once a month to see the PCP for my 6 months diet, but he can't weigh me because his scales don't weigh hogs. Ironically, my pulmonologist has scales that weigh up to like 800 lbs. or something like that, so I can weigh at his office. Never get any good news though. I always gain weight.
I'm glad I don't have a daughter working at Sonic; I'd be making her bring me stuff home all the time and wouldn't lose weight then for sure. I want to try that orange creamsicle thing they advertise on TV. Sounds yummy. My nephew and his wife like some kind of breakfast sandwiches there that are $1.99. Haven't had them...not a breakfast person, but they sound good.
Hope you and your daughter are both doing better today. Breaking up sucks, even if it's for the best.

I found this in a magazine for diabetics. I am trying to avoid all red meat and only use ground turkey in place of ground beef. I am thinking of giving this a try, since I am now trying to eat more along the lines of organic and vegetarian......Sandy
BEAN BURGERS
1 15oz can of chickpeas, drained and mashed
1/2 c. red onion, finely minced
2 celery stalks, finely minced
1 carrot, finely diced
1 garlic clove, finely minced
1 c. plain breadcrumbs
2 Tbsp minced parsley
1 Tbsp Dijon mustard
1 egg white
2 tsp. Worcestershire sauce
2 tsp olive oil
1/2 tp dried thyme
1/2 tsp dried basil
1/4 tsp dried oregano
salt n pepper to taste
1 Tbsp non fat mayo or low sugar ketchup (optional)
1. Preheat oven to 350 F
2. Combine all ingridents except for mayo and shake into patties. It will save time to mince and ma**** all in a food processor
3. spray a large baking sheet with cooking spray, place the patties on the baking sheet and cover with foil. Bake for 30 minutes.
4. uncover and bake an additional 5 to 10 minutes or until well browned. Serve each burger with mayo or ketchup ( low sugar) as desired and serve on whole grain buns or pita pockets.
Serving size: 1 burger

Total fat: 6 gms
Cholesterol: 0
Sodium: 513 mg
Total Carbs: 43 gms (YIKES)
Sugar: 8 gms
Protein: 11 gms.
Im not eating any breads so maybe the carb count would not be as much, is this sodium count too high? I read on the boards, to watch sodium but no one has ever said what would be ideal range of sodium to watch? This photo of the finished product, sure makes it look GOOD.. LOL

I dont know a thing about Wordperfect, sorry. My word pad is screwy at times. I have alot of geneology files I can not open for some reason. I keep getting a word pad error. I NEED these files. I just think I am going to have to store them on my MSN group, and then download them again when I can afford a new computer. Mine is going on 6 years and I am still using Windows 98 for crying out loud! It has almost seen better days. Wish I could help.

Those of you who are smart with computers, I've got a quick question for you.
When I go to my WordPerfect, for some reason, the letters are HUGE and I can't get it sized down to a normal size. If I try to open up a file that was done in a normal size, the letters are so big I have to pull it to the left and the right to even read it. When I try to type something new, I try to get the lettering small, but it clicks right back to the GIGANTIC print.
What on earth am I doing wrong?????
