I have not baked them, but I have grilled them and they are great that way. Another thing that I do with them is to do a marinated veggie salad with tomatoes, cucumbers and the onion with some zesty italian dressing. I also do a pasta salad with them and 3 color rotini, sweet green bell peppers a bit of ham and some good parmesan.
Since vidalias are sweet...they're perfect mixed in things that will not be cooked like tuna, chicken or potato salad. They are good too just sliced on top of some tomato.
One good thing...vidalias will keep for a while...so you don't have to be in a rush to use them up.

Yesterday I got a craving for garden vegetables so I went to the farmers market and loaded up on shelled butterbeans, shelled peas, cucumbers, fresh tomatoes, broccoli, sweet bananna peppers, watermelon and grapes, squash and vidalia onions. Im here to tell ya I got all of this for less than 40 bucks, very cheap in my opinon considering grocery stores want almost 3 bucks a pound for grapes alone! and the beans and peas are already shelled.
I cooked the squash with the vidalia onions and a new country crock butter with 4 gms of fat and no carbs in it Country Crock with YOGURT! Very good. Had some broccoli, butterbeans with small amount ham hocks and some of the new butter, sliced tomatoes with the sweet bananna pepper, very small taste of cornbread. It was heavenly. I finished it off for lunch today.
Now, I need to know what you guys do with vidalia onions. I know there is a recipe to bake them, has anyone ever tried them this way? Onion soup? I love them with squash but I have 5 pounds of them and need to use them in other ways too.

FINALLY a WOW moment! All my clothes are just hanging on me so knowing I had a doctors appointment yesterday, I went out and bought some capri pants. I didnt try them on. I was just going by the size of the jeans I was wearing at the time, which fit comfortably, size 24W. I dont want to spend alot on clothes at this point so I only go looking when the clothes are getting too baggy in the butt to keep wearing. I bought 22/24W. I just knew they would fit, because the 24W jeans are baggy in the butt but fit across the belly just fine.
I go to get ready for the doctors appointment and put on the capri jeans and they were so loose they were literally were falling down. I thought, WTH! I grab the sage green ones, hoping they would fit better because they are a different material. I noticed I grabbed the wrong size on them. 18/20W. I thought, great these are gonna be too small and I gotta go to the doctors nakid!
I was SHOCKED to see the 18/20W fit perfectly! I cant believe the difference between last week and this one with only 3 pounds lost in the last 2 weeks. Needless to say I took the 24W jean capri's back and got a size 18!
I didnt get to see my surgeon yesterday. He was in emergency surgery. All my blood levels are good except my Iron and Ferritin levels. They keep going down. My ferritin level is a 7, I think a normal low is 50 so it is really LOW. Im waiting to have my surgeon call me and let me know what we can do about this but at least my hemoglobin was up this time to 23. My B12 level remains HIGH, so I keep taking my sublingual B12 to keep it up. Apparantly Im not drinking enough fluids, my BUN was low at 7 so I have to work on increasing fluids more. I sip ALL day and ALL night as it is, but obviously it isnt enough so will have to try to drink more. Im tripling the bariatric advantage iron tablets but they are not working too well for me, so I have no idea what he will want to do. I was borderline anemic pre op, and it seems this is getting worse post op.
Ive lost 45 pounds total. July 4 will be my 3 month post op date, and I am right on schedule according to the nurse. I feel better knowing that. I know others loose much more 3 months out than I have but on the other hand I am glad it is going slowly to hopefully avoid gallbladder problems you can have from rapid weight loss.
Im just 8 pounds away from my first real goal of getting under 250! This will be the first time in 5 years I have been under 250, when I can get under 200 that will be my first time since the 5th grade, IONS ago!

Has anybody heard from Beth H from Tuscaloosa? I sent her an email yesterday and haven't heard back from her. She was supposed to get her U/S test results yesterday I think to tell her if her GB was bad and needed to come out. If you hear anything, let me know!

Ive often asked myself this many times. What are we here for and WHY do we have to go through the things we do?
In times of tradgedy, things happen we do not understand and seek answers for. I do anyway. Ive been seeking to answer these questions for years now. About 2 years before my sister was diagnosed with breast cancer, she went under a 18 wheeler in Atlanta. Almost took off the top of her head, only 3 inches of skin, kept it intact. Miraculously she survived, but was in a coma for 3 weeks before she came out of it. WHY did she have to go through this, only to die from cancer 2 years later? BTW, she graduated with honors from Emory Univ. with her Nurse Practioner degree, 2 months AFTER this accident. It was one miracle after another with this experience. Im still trying to understand this one! Normally one would have massive brain damage from a severe head injury, she woke up with no damage whatsoever to her brain, motor functions or speech patterns. It was just like she had slept for 3 weeks and woke from a long nap.
I am guessing my role in life is to be a healer, be it from physical aspect from disease or the spiritual aspect. I seem to find myself in situations where there is a need for some kind of healing. My name means "helper of mankind". Do a search for the meaning of your name. Its interesting to see what the meanings are and how close does it actually come to your personality? I do find myself wanting to help anyone as much as I can. I find myself trying to be the peacekeeper and I like harmony and balance, but that is part of the Libra personality as well.
Ive come to realize that everything in this life is meant to be a lesson. There is something to gain and learn from, even from the bad stuff we encounter. Alot of times, it sucks, but you can look back on the experience and see why you had to go through it to start with. Sometimes it takes a long time to see the forest for the trees, but eventually it will click Sandy
