Vidalia Onions
Yesterday I got a craving for garden vegetables so I went to the farmers market and loaded up on shelled butterbeans, shelled peas, cucumbers, fresh tomatoes, broccoli, sweet bananna peppers, watermelon and grapes, squash and vidalia onions. Im here to tell ya I got all of this for less than 40 bucks, very cheap in my opinon considering grocery stores want almost 3 bucks a pound for grapes alone! and the beans and peas are already shelled.
I cooked the squash with the vidalia onions and a new country crock butter with 4 gms of fat and no carbs in it Country Crock with YOGURT! Very good. Had some broccoli, butterbeans with small amount ham hocks and some of the new butter, sliced tomatoes with the sweet bananna pepper, very small taste of cornbread. It was heavenly. I finished it off for lunch today.
Now, I need to know what you guys do with vidalia onions. I know there is a recipe to bake them, has anyone ever tried them this way? Onion soup? I love them with squash but I have 5 pounds of them and need to use them in other ways too.

I have not baked them, but I have grilled them and they are great that way. Another thing that I do with them is to do a marinated veggie salad with tomatoes, cucumbers and the onion with some zesty italian dressing. I also do a pasta salad with them and 3 color rotini, sweet green bell peppers a bit of ham and some good parmesan.
Since vidalias are sweet...they're perfect mixed in things that will not be cooked like tuna, chicken or potato salad. They are good too just sliced on top of some tomato.
One good thing...vidalias will keep for a while...so you don't have to be in a rush to use them up.

I like to make foil dinners....get a huge piece of heavy duty foil and put a ground beef patty, onion slices, potato slices and every veggie that will fit in it, dot with some butter and close it up and bake it for about an hour.
My sister has some kind of gadget that you can put an onion in and it makes those bloomin' onions. I haven't seen it, but my dad was talking about it one day like it was some wonderous thing my sister has, but I can't ever remember to ask her what it is she has.
I love squash baked in the oven with butter in those foil dinners.
Paul Deen on the Food Channel says butter makes her complexion pretty. She's so funny. After WLS, I'm going to have to stop watching her show because she always does those wonderful Southern dishes. And I didn't get to the shape I'm in right now eating Asian dishes.

funny girl... I am eating alot of asian/chinese stuff now. I think I have egg drop soup at least 3x a week now. I finally found a restaurant here that makes it taste so good, all the others around here suck compared to them. Im now ordering "Dragon and Phoenix" which has the Moo Goo Gui Pan sauce, only with chicken and shrimp. I get it without snow peas, and I end up with more chicken and shrimp that way and more protein.
Ive made the foil dinner but never with vidalia onions. I bet they would be GOOD! I will try it with ground turkey and spray the foil with Pam, since turkey doesnt have all the fat ground beef has. I always added a little celery salt on top. It just gives them alot more flavor.

My parents and I love Vidalia Onions. Here are a couple of casseroles we make with them.
Vidalia and Ritz Casserole
5 vidalia onions, peeled and sliced
1 stick oleo
1/4-cup water
1 package (roll) of Ritz Crackers (crushed)
1-1/2 cup grated extra sharp cheddar cheese
Cook onions in water and oleo until tender. Layer in casserole dish: onions, 3/4-cup cheese, 1/2 roll of crackers. Cover with foil.
Bake in a 350-degree oven for 15 minutes. Remove foil, sprinkle with remaining cheese and crackers. Continue to bake for 10 minutes or until brown.
Vidalia Onion Casserole
Saute onions with 1 stick oleo. Layer onions, parmesan cheese, and Ritz Crackers crumbs. Repeat layers using buttered cracker crumbs on top. Bake at 350 degrees until light brown.
The last recipe is very similar to the first recipe except for the type of cheese used and the use of water.
