Bean Burgers
I found this in a magazine for diabetics. I am trying to avoid all red meat and only use ground turkey in place of ground beef. I am thinking of giving this a try, since I am now trying to eat more along the lines of organic and vegetarian......Sandy
BEAN BURGERS
1 15oz can of chickpeas, drained and mashed
1/2 c. red onion, finely minced
2 celery stalks, finely minced
1 carrot, finely diced
1 garlic clove, finely minced
1 c. plain breadcrumbs
2 Tbsp minced parsley
1 Tbsp Dijon mustard
1 egg white
2 tsp. Worcestershire sauce
2 tsp olive oil
1/2 tp dried thyme
1/2 tsp dried basil
1/4 tsp dried oregano
salt n pepper to taste
1 Tbsp non fat mayo or low sugar ketchup (optional)
1. Preheat oven to 350 F
2. Combine all ingridents except for mayo and shake into patties. It will save time to mince and ma**** all in a food processor
3. spray a large baking sheet with cooking spray, place the patties on the baking sheet and cover with foil. Bake for 30 minutes.
4. uncover and bake an additional 5 to 10 minutes or until well browned. Serve each burger with mayo or ketchup ( low sugar) as desired and serve on whole grain buns or pita pockets.

Im not eating any breads so maybe the carb count would not be as much, is this sodium count too high? I read on the boards, to watch sodium but no one has ever said what would be ideal range of sodium to watch? This photo of the finished product, sure makes it look GOOD.. LOL
