If the employer has less than 100 employees, there may not be anything you can do. Insurance companies simply sell then stripped down bare bones plans only.
If the employer has more than 100, you can appeal to the HR department about being "under insured" and give them details and information and request they look into expanding coverage at the next contract re-negotiation (see my blog, I'm doing this myself).
Otherwise, you can get a part time job with Starbucks (whose employee insurance covers it) or another company you know has insurance that covers it.
Last resort, self-pay. Mexico, Brazil and Spain have excellent surgeons who charge half the price (including air fare and hotel) than US surgeons.
