I am post-op Gastric Bypass about 7 weeks and I am on the soft food stage. I have been craving a low fat version of Eggplant Parmasean. Normally it is fried before baking but I would grill it instead. Has anyone tried anything like this?

I guess eggplant parmasean would be soft if grilled.  There are many low carb diet books out there.  I'm fairly sure that there are several cookbooks for bariatric patients written by other post-ops.  Also, there is a Recipe Forum you can look at.  Just scroll down through the pages and you are bound to come accross some recipes that you will want.
