Vanishing Vixen

One of my favorites before surgery was shepherd's pie, and I can still eat it now, just with very little potato. Plus since it's mostly beef, it offers a lot of iron and protein. 1 lb 93% lean ground beef 1 8oz can of corn 1 8oz can of peas & carrots 2 tbs worcestershire sauce 1 c beef broth prepared mashed potatoes to cover brown beef and drain fat. add drained veggies, 1/2 of the broth and the worcestershire sauce. cook on low for about 15 minutes. add more broth if necessary. transfer to a casserole dish and cover with the mashed potatoes. bake on 350 for about 45 minutes. It's delicious!
