My sister gave me this recipe and I love it. I call it Lorrie's Orange Fluff
1 16 oz. container of ff cottage cheese
1 package of sf orange jello
1 container of sf whipped topping
1 can mandarin oranges (drained)
Mix the cottage cheese and the dry jello powder together.
Add in 3/4 of the can of oranges.
Stir in the whipped topping and garnish with remaining oranges.
Refriderate.
My DH makes this for me all the time. It's refreshing and elegant enough to serve guests. You can use any kind of fresh berries. He's used strawberries, blueberries and raspberries in the past:
Guilt-Free Fruit Parfait
2 c. fresh berries
1/2 c. water
Splenda to taste (He starts with a couple of tablespoons)
3 T. tapioca
SF or Lite Cool Whip
Soak the berries in the water and Splenda for about 15 minutes in a saucepan. Bring the mixture to a full boil. Turn off the heat and add the tapioca and stir until thickened. Let cool slightly and then layer in parfait glasses with the Cool Whip. Refrigerate until chilled. Garnish with a fresh sprig of mint. Makes about 4 servings.
