My favorite "recipe" is just something I throw together...
Melt 1 TBS of butter in a saucepan, add a tsp of minced garlic and some bacon bits - saute. Add a can of spinach, and let simmer for awhile. Add a couple of handfuls of shredded cheese (any kind works) and stir well. YUMMY!
I don't know nutritional values, but I'm sure it's high in iron!

One Pan Indian Roasted Chicken with Potatoes

This one-dish wonder is perfect for a chilly autumn evening.
Ingredients

1 tbsp (15 mL) each mild Indian curry paste and lime juice
?
2 lb (1 kg) chicken breasts and legs
?
½ tsp (2 mL) each salt and pepper
?
3 cups (750 mL) halved new potatoes
?
1 bunch green onions
?
2 tbsp (30 mL) vegetable oil
Preparation
Blend curry paste with lime juice until well combined. Add chicken, salt, pepper and potatoes and toss to coat. Slice roots from bulbs of green onions. Cut white bulbs from green onions leaving a tail of about 1 in (2.5 cm) of the green part attached. Add bulb ends to chicken mixture. Thinly slice 1/4 cup (50 mL) of the remaining green part of the onions and reserve.
Preheat oven to 400F (200C). Pour oil into a roasting pan and place in oven until very hot. Spread chicken mixture evenly in heated pan and return to oven.
Cook, stirring occasionally, for about 45 to 50 minutes or until an instant-read thermometer inserted into chicken registers 175F (80C). Stir in reserved green onions.
Nutritional information
Per serving (without chicken skin): 16 g fat, 22 g carb, 36 g protein, 3 g fibre, 480 mg sodium. Excellent source niacin.
Good source iron.

Dirty Shrimp
2 lbs shrimp, shelled and deveined
2-4 tablespoons butter
2 teaspoons garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1/2 cup light beer
Saute garlic and herbs in butter until garlic is slightly browned. Add shrimp, stirring constantly, until shrimp are pink and done. Pour in beer, simmer 1 minute more, and serve!

wow, some really good recipes.. I like to take shimp and make a soup with green onion and bamoo shoots , straw mushrooms, juice from a lemon and hot sauce.. ummmm
I love peanuts. I also love having a wheat tortilla with either ham/turkey/chicken with cheese for my breakfast in the mornings on the way to work. It's very easy to prepare and eat on the road, plus I get a good amount of protein in first thing in the morning....that's on top of having 16 oz. of milk while I'm getting ready for work.
