This is a recipe that I have done some "tweaking" too so it is lower in fat and colories but still keeps it's protein count up.
Mini Quiches
3/4 cup diced low fat ham or low fat canadian bacon (fully cooked)
1/2 cup shredded reduced fat (I use 2%) cheddar cheese
1/4 cup green pepper, chopped fine
1/4 cup onion, chopped fine
Egg beaters (equivilent to 3 eggs) or 3 whole eggs
1 cup non-fat half and half cream
1/4 cup light butter, melted
3 drops franks hot sauce
1/2 cup reduced fat biscuit/baking mix
2 Tbsp grated parmesan cheese
1/2 tsp ground mustard
In a bow, combine the ham, cheddar cheese, onion, green peppers; divide among 12 greased muffin cups. In a mixing bowl, combine the remaining ingredients just until blended.
Pour liquid mixture over ham mixture. Bake at 375 degrees for 20-25 min or until a knife inseared near the center comes out clean. Let stand for 5 minutes before serving.
Mini quiches can be frozen and reheated in microwave for a quick breakfast. I have also made this in a regular pie dish for a family meal. May need to bake just a little longer that way.

Stove Top Casserole
Package of turkey smoked sausage
Head of cabbage
Medium onion
3 medium potatoes
Can of green beans
Half cup of water or broth of your choice
Season to taste
Spray a large skillet with cooking spray. Cut the sausage up into half inch pieces and put in the bottom of the skillet. Core the head of cabbage, cut up and layer over sausage. Cut up the onion and layer over the cabbage. Wash and peel the potatoes and slice them thinly over the onions. Drain the can of beans and pour it on the top. Add the broth or water. Cover tightly and let it coo****il the potatoes are tender.
I eat everything except the taters. I make cornbread to serve with it for the others in the house.
This wasn't a WLS recipe. My mom used to make it for us when I was growing up and it reminds me of "the old days".

I love my Chicken in a Crock Pot...
Chicken parts
2 Cans Whole peeled Tomatoes (crush with your hand as you add to the crock pot)
2 onions cut into wedges
some fresh mushrooms
Put all ingredients into the crock pot and cook on high for at least 6 hours the meat falls off the bone! YUM.
