Daily Post--1/18/08
I don't do a great deal of modifying at this point (3 1/2 yrs. post-op) but do use extra lean ground beef, lower fat cream cheese, 2% cheeses--stuff like that. When making something like meat loaf, I add in grated raw carrots and shredded cheese for extra nutrition. I really prefer to make recipes fairly close to normal and just scrape off excess sauce and/or eat smaller portions. I cook relatively plain foods in the first place, so I don't have much trouble.

I still use real eggs, and I use less sugar/ mixed with Splenda, applesauce instead of vegetable oil , Almond Flour instead of white flour,Oatmeal instead of white flour as well. Low fat cream cheese and yogurts, instead of sour cream. I use a carrot in some of my Beefs, since a carrot is sweet to add taste without anything immation. I eat alot of Crab, Shrimp, fish, Beef,and chicken. for chickens I add orange juice, apple juice to cook it in, instead of water. Sometimes as a marinate, I make my own marinates, and BBq, sauces. So I can control the sugar content.
I too will substitute splenda for sugar, I will also use turkey instead of beef sometimes or I look for the extra lean ground beef. I also look for ingredients that are low fat and low in sugar. The spaghetti sauce I use is organic because it has a very low sugar content and it's low in carbs and fat. When I made tuna salad or chicken salad I use the low fat mayonnaise and I use sugar free relish. When making pizzas I opt for the tortilla pizzas with the carb control tortillas, low fat mozzerella & organic sauce. My family loves them!
Well the things I make donj't have sugar in them so I don;t need to worry about replacing that. If it is something that has a high fat way of cooking it I will try to use a better way to cut the fat down. But for the most part I don't do any type of real baking that I would have to use splenda or egg beaters. I just try to stay with things that are already low in sugar, fat and carbs.
