Daily Post--1/16/08
I do a little of everything. I love my crockpot. I use it often for a meat and potatoes meal. I eat the meat. I also make a skillet casserole that can be made with lots of variations. The basic way to do it is smoked sausage (I use turkey) on the bottom, cabbage on top of that, an onion cut up and potato cut up and throw in a can of green beans. About a half cup of water. Salt and pepper to taste. Cover and coo****il taters are done. I eat some sausage, cabbage and green beans and the guys can have it all. I'ts pretty quick, really cheap and easy to do.

I cook both, it depends on the day.. Mondays and Tuesdays I cook the same meal but its a starchy meal, I leave that out for my portion. Plus I like mine spicy. Wed- Fridays. I cook seperate meals.. They get a crock pot meal or a roast and I get what I cooked on tuedays for the rest of the week. Usually chicken breast with salsa,and cheese and avacado, liver pate, Soup, Weekends we eat out.. I work long hours and nights, so I try to make what i need to eat on tuesday nights so I have food for the week, for all of us.. There are some good recipe ideas . thanks all... Cynthia
I do best with convenience type meals. I keep cans of refried beans or chili with beans in the cabinet, nuts, eggs and cheese in teh fridge. Working retail, I have a crazy schedule that is never the same, so I'm seldom home to cook for the family. They have to cook something we can all eat, or they cook for themselves if I'm working late. It's been a long time since we've actually had a family dinner.

My adult daughter and I live together, and pre-surgery, we ate out a lot. Neither of us really liked to cook...
Post-WLS, I ate a lot of easy things - tuna, shrimp, eggs, etc. I left Chrysti to her own devices, and after a few months (and me getting closer and closer to her size), she started eating whatever I was having.
Now, I try to cook several meals (proteins) once or twice a week, and refrigerate them in small portions. That way, I can just grab a container on the way to work in the morning, and my lunch is ready. Chrysti always has something in the 'fridge to eat during the day, too.
A year and a half after surgery, I've lost about 180 pounds, but even better, Chrysti's lost more than 60!! She is still smaller than I (size two, to my size four).... and she eats much like I do. If for no other reason than that in my learning how to take care of myself, I've been able to teach her to take care of her body, I'm so thankful for WLS!
I was trying to eat whatever I fixed the family but I have come to the conclusion that most times I cannot eat what they do so now I fix 2 meals. Or they go get takeout and I fix me something to eat at home. Since I am only able to eat ground beef and beans the only times we share the same meal is when I am fixing something with the ground beef in it.
I usually cook separate meals for my husband and kids. Though I will eat the lowfat meals I prepare for them.
Though the easiest think I make myself is chicken quesadillas. I make it with 2% mexican blend cheese and the southwestern flavored Louis Rich chicken pieces and some taco bell mild sauce. I grill it on the griddle with some parkay spray. YUM
Well, I must say that during the week, I don't cook!! Hehehehe. My DH gets home from work at 2:30 and I don't get home until 5:30 so during the week he cooks. I generally will pull out everything in the morning for him what needs to be cooked though. Or if it's something like roast or something like that I generally will put it in the slow cooker and season it and put onions, potatoes and carrots in there and let it cook all day and then it's ready by supper time. I do not cook seperate meals. What I make is what we all eat. This has helped to teach the kids to eat healthy now, too. It was a battle at first, but now they like it!!
