Daily Post--1/16/08
Well while my daughter is in college I cook for just me. I like to bake chicken or fish for the most part. I do some frozen lean cuisines and healthy choice from time to time also. When my daughter is home from college I cook for both of us because she has also had gastric bypass. We really enjoy homemade soup so I will try to make that once a week or so. We also enjoy taco salad (made with lean ground meat or ground turkey, low fat cheese, low fat sour cream) We also like to split a south beach diet frozen personal pizza (30gm protein). Guess what ever we are in the mood for or sounds good at the moment. One of our favorites is a 4oz piece of beef tenderloin on the grill with some steamed veggies. YUMMO

there are just two of us at home- while i was working and in school- hubby did all of the cooking- now that i am unemployed and out of school i try to help again- i actually enjoy cooking! he is not working and he loves to cook.....
we unfortunately eat a lot of what i call slider foods- dunno why exactly- at one point was cuz he had some teeth issues - now i think it's what he enjoys cooking- soups stews chilis etc- one pot meals....
we also unfortunately don't know how to cook for two ppl! everything is in huge quantity- his reasoning is that you are using the heat (electric or whatever) and the pan so why not cook for more than 1 meal-he think it is time efficient and it probly is- i got tired of 5 nites of something so now we usually have at least two diff things in the frig at once for variety-
tonite we are eating out of the freezer- some beef chow mein- fresh bean sprouts will doll it up and we will have rice- i just will eat less.....
we also put a pork roast in the crock for tomorrow- we cook it in foil with bacon wrapped around it and white grape juice in the bottom of pot under a ver steamer basket- so it tastes much like Hawaiian pig -we cook it 24 hours- the white grape juice is instead of the grape leaves that an authentic pig would be roasted in - and the juice gives it =well- juice. the gravy that he can then make is a burgundy gorgeous color....this is not really a low fat meal but i use moderation with whatever else i am doing for that day--
i would love to eat more meat on the grill but we don't have a forman type and our outdoor grill is too much bother at our house-
we love chicken/ anything mexican.....turkey.....
I like to put chicken, whole peeled tomatoes and onions and sometimes mushrooms in a crockpot and let it cook all day.... for a side, I'll have a salad and everyone else will have egg noodles and salad.
Also like to make, chili ~ I add cheese and a little sour cream and have it in a cup... the guys have it over rice.
I love grilled chicken and so does everyone else.

This is actually one of my areas I struggle... I want to be able to enjoy meal time with the hubby...
I try to cook meals for us both and so does he..
I guess we do both.. Like tonight I cooked black bean soup and he had some hot pockets as I was going to have a soft dinner due to not taking care of myself today. But Im back in the game,drinking water and eating protein!
Unfortunately I am still single and "cook" meals for myself. I know we're not supposed to do this (I really don't know why) but I eat the same thing for breakfast, lunch, and dinner every night and when I am tired I switch. Usually my "meals" last a month or so. I work weird hours, long hours, and do not enjoy cooking AT ALL!
It's just my husband and I so we'll typically do a protein entree (fish, beef, pork, poultry--often grilled), salad, and veggies. Rarely do we have potatoes, bread, or stuffing--but once it awhile it tastes so good! I love to cook, so I'm frequently trying out recipes from various sources. Cooking Light has had some good ones lately...
